Koulourakia (Traditional Greek Cookies)
Ingredients
- 1.5 cups butter
- 2 cups sugar
- 7 eggs total (5 for dough, 2 for egg wash)
- 4 tsp vanilla
- 7 cups flour (+/- depending on consistency)
- 3 tsp baking powder
- 1/2 tsp baking soda
- sesame seeds
Instructions

Preheat oven to 350°F (or 300°F, see below)

Cream (softened) butter and sugar until fluffy. Add in eggs and vanilla and beat well to combine.

Combine all dry ingredients (flour, baking powder, baking soda) in a separate bowl.

Slowly add dry ingredients to wet, mixing thoroughly. There comes a point where the dough gets too thick for an electric mixer, when you have to start kneading by hand. Keep adding flour until the dough consistency is no longer sticky.

Pull out small handfuls of dough, roll and twist into shape. Cookies should be about 2-3” in length. (They don’t rise/expand much once baked.)

Brush with beaten egg. Sprinkle on sesame seeds.
Cooking
Softer cookies
Bake ~15 minutes (depends on shape), on 350°F. Remove when golden brown. Let cool on sheet before removing to rack.
Crunchier cookies (more authentic / like I remember from childhood)
Bake ~25 minutes (depends on shape), on 300°F. When just starting to golden/brown, turn off the oven. Let them sit in the warm oven until cool.
